Being the mother of a 3 year old princess, easy dinners are always winners for me! You pair that with delicious pasta and Im hooked! This is easily a 30 minute meal for 4-6 people, if youre prepared. Just a little FYI in cooking.... The trick to making any meal super easy and quick is to have all the ingredients measured and ready to go! Well lets get started....
~Cheesy Beef and Tomato Pasta Skillet~
Ingredients
- 2 TBSP of olive oil
- 1 small onion, chopped
- 2 cloves of garlic, minced
- 1 pound of ground beef
- 2 Tsp of garlic powder
- 2 Tsp of onion powder
- 2 TBSP of tomato paste
- 14 oz can of diced tomato, with liquid
- 2 cups of beef broth
- 1 pound of small pasta (rotini, macaroni, bowtie, shells)
- 1/2 cup of water
- 2 cups of shredded mozzarella, or your preferred
- salt and pepper, to taste
- chopped parsley for garnish (optional)
Instructions
- In a large (12") skillet, heat olive oil over a medium heat. Add onion, beef and garlic. Mix in garlic powder and onion powder, a spinkle of salt and pepper.
- Cook stirring often, breaking up beef as you go, until meat is no longer pink and onions are soft.
- Drain grease from pan.
- Add meat back to pan after grease is drained. Pour in tomato paste, diced tomatoes, beef broth, water, and pasta.
- Stir well, mixing in all ingredients. Bring to a full boil, reduce heat to low, cover and cook for 15- 20 minutes, stirring a couple time.
- When pasta is ready, cooked to your liking, turn off heat.
- Sprinkle on 1 cup of cheese.
- Stir in cheese, until melted. Top with remainder of cheese (I chose fresh parmesan for this), cover and let melt completely.
