Hamo is sort of eel. Then Matsutake is one of mushroom in Japan.

Summer is best season for Hamo. Otherwise autumn is best season for Matsutake.
So there is only brief time we can eat both thing together.

Japanese are fond of feeling the changes of the seasons through food.

Sanuki udon has been very famous in Japan recently.
It's very chewy but too firm for me.
Osaka Udon is little bit softer than Sanuki Udon so that it delicious that soak into Dashi.
