"Cayman Vanilla Walnut Ice Cream & Chocolate Cake with Avocado Icing"
I came across this memory as I was going through photos from my 2012 Cayman Island Spring break vacation. For St. Patrick's Day we were served this amazing dessert.
Want to know a secret? The green on top of the layered chocolate cake was not mint. Avocado was mixed together with mysterious ingredients to create the most delectable icing ever imaginable! It tasted even better than it looks!
