(I don’t know who doesn't dream of swimming in the frothy, whipped topping of this you-won’t-believe-it’s good-for-you piece of pie!) let me also just say that this wonder recipe is also:

I’m just going to say one little thing:
What You Need:
Nut-tastic crust 🥜
• 1 cup soaked almonds
• 2 cups shredded dry coconut
• 2 tbs cold pressed organic coconut oil
• 3 tbs coconut nectar (or maple syrup, I use coconut nectar because it’s easier for me to get than maple but both will do the trick of making this treat tasty sweet!)
Chocolate-heaven-‘sent’-er (the middle-y area) 🍫
• 1/2 cup coconut nectar
• 3/4 cup cacao powder
• 1/3 cup cold pressed organic coconut oil
• 1/4 cup water, added slowly (as needed)
A surprise layer of strawberries within 🍓
• A handful of strawberries sliced thinly
Coconut cream dream (whipped wonder) 🍰
• Meat of 2 young coconuts (or you can buy coconut cream pre-packaged if you prefer)
• ½ cup cold pressed organic coconut oil
• 1/4 cup coconut nectar/maple syrup
• Coconut water (as needed)
• Pink Himalayan sea salt
• 1 tsp Vanilla Extract
To Top it All Off: 💜
• Chocolate chunks
• Coconut flakes
• More sliced strawberries!
Why not just throw more of what we love on top? It makes it extra yummy in the tummy!
This Is How We Do It
Start off by eating something first otherwise you’re not going to be able to finish this! It’s so tempting to eat it as soon as it’s picture ready but it’s worth the reward to wait it out and give it some time to cool down in the fridge or freezer if you’re enthusiastic ;)
Grab all of your nutty crust ingredients and put them in a food processor (difficult, I know!) ;) You want it to stick together! Once you notice it’s blended into one loving, delicious concoction, take it and press it into a pan. I push mine down pretty firmly into the pan as I find it cuts into sections better that way! You can put this into the fridge for now to set.
For your decadent chocolate center, again all you have to do is add all of the ingredients into a food processor (you don’t even need to wash it out! All the ingredients commingle later anyway!) Add coconut water as needed but don’t make it too wet! You want a thick, creamy layer, not a melty, messy one!
Spread this delicious ‘frosting’ over top of the nut base and put into the fridge to set. If you’re in a hurry to eat this ASAP, go ahead and speed things up by putting it in the freezer- I certainly won’t hold it against you (what do you think I did?) ;)
Meanwhile, since things are getting hard. I know you want to eat it already, trust me, I feel you, I have been there. Let’s distract ourselves by cutting up some strawberries! Hey, let’s eat some while we’re doing this! See? Yum! Strawberries are almost as good as Chocolate Strawberry Coconut Cream Pie.
Let’s make the coconut cream!
If you’re lazy (I mean eager) and yours is pre-made, dump it out of it’s container and add the following ingredients to it. If you’re like me and live for making things from scratch, let’s get that coconut meat out and into the food processor!
(Can you believe that I only got a food processor last week?! I’ve been traveling for so long, I don’t have a full kitchen yet and I am thrilled beyond belief to have one of my all time favorite appliances by my side!)
For the DIY’ers- add in water slowly!
(Only as needed) until you get a thick, creamy mixture. I got carried away with myself and didn't snap any photos of this! I'm sorry I was so busy eating it, I forgot to share this part with you!
For everyone:
Add in the sea salt, nectar of choice, coconut oil and water and blend. You want it to be creamy, chunky even depending on your preference. I like mine to be thick, not at all runny!
Now that you have your cream ready, I bet you you can take your pie out of the cooling device you’ve chosen and start strategically placing your strawberries all over it!
Once you’re satisfied with that part, go ahead and layer it with any cream you have left over (I know you’ve been eating it!)
Dress that little wonder up with whatever tickles your fancy. I loaded mine up with extra strawberries, chocolate sauce and coconut flakes. Not only does it look prettier, it also makes it irresistible ;)
Hmmmm.... I think it could use a little bit more "oomph" don't you? Let's try again!

Now is the hard part. Say goodbye to your little friend… the fridge awaits…let the whole pie chill (use the freezer to speed this up but don’t leave it too long or it’ll be too hard to cut and then you’ll have to wait for it to thaw in order to eat it and that would be crazy!)
Give it an hour to chill out, collect itself and get ready for your the greatest day of it's life- giving you intense sensory pleasure! It’s currently living it up, partying with the most scrumptious ingredients it’s ever had the chance of mingling with!
After you’ve tested your patience, go ahead, dig in and don’t forget to share 😘
