Beet risotto and vegetable broth and dessert, beet biscuits with cocoa and a 4 in 1 juice.

Hello friends of the community, this is my entry to the first week of the Medicinal Gourmet Cooking Collective Challenge, proposed by @eco-alex. I hope you like it.

In this totally vegetarian and beneficial menu for the heart, the basic ingredients that I include are: the beet and the cocoa, the orange (vitamin c).

"The beet contains folic acid, which is perfect for preventing heart disease.
The Cocoa has a high concentration of polyphenols, which has an antioxidant and anti-inflammatory action in our body that helps reduce cholesterol and control blood pressure."
Vitamin "C" has the ability to relax and dilate blood vessels, allowing blood to flow more easily and prevent heart attacks.


This is my menu starting with.

"Beet risotto"


INGREDIENTS:


100 g of rice
1/2 tablespoon garlic porro (leek)
1/2 tablespoon onion
1 clove garlic
100 ml of wine
100 ml of vegetable broth
150 ml of beet juice

ELABORATION:

  1. Cut leeks, onions, garlic finely and cool over low heat with sunflower or olive oil.
  2. Add the previously washed and drained rice and leave it until it starts to turn transparent.
  3. Add the wine and let it evaporate while stirring.
  4. When the wine has evaporated, add the vegetable broth, let it cook over medium heat and add the beet juice, let cook a few minutes more and that's it.
  5. Decorate to taste.

"Vegan cacao and beet cookies"

INGREDIENTS:

Recipe for 6 cookies 1/2 cup wheat flour 2 tablespoons of cocoa 1/2 cup of grated or processed beet 1/4 cup of sugar 1 teaspoon baking soda 1 pinch of salt drops of chocolate 1 teaspoon vanilla 1 tablespoon of sunflower or soybean oil

ELABORATION:

  1. Preheat the oven to 180 °
  2. Mix all the dry ingredients.
  3. Add vanilla, oil and beets; mix to integrate everything.
  4. Add the chocolate drops
  5. Place in a plastic and take it to the refrigerator for 1 hour.
  6. Cover a tray with parchment paper, with a spoon place the dough in equal proportions.




Juice 4 in 1

INGREDIENTS:


1 orange
1 cup of water
1/4 beet (raw)
1/2 carrot (raw)
Peppers

ELABORATION:

  1. Wash and cut all the ingredients
  2. Place all the ingredients in the blender. Note: It is not necessary to place sugar.
