This Mixed Beans Salad is packed in protein and high in nutrients. It contains various mineral that supports healthy digestion, prevention of diseases, specifically colon cancer due to its property contents, and it promotes lungs health.
This type of salad is also ideal for athletes people, or for people whose work requires lots of energy.
Soaking Beans overnight, or at least 8 hours before cooking ensures maximum nutritions and safety. (Red kidney beans should be soaked at least 8 hours prior to cooking to avoid toxicity). The longer the Beans soaks, the quicker it cooks.
(You can also use ready made canned beans if you wish)
Ingredients:
- chickpeas/garbanzos and red kidney beans (boiled or tinned beans)
- cilantro/coriander leaves (roughly chopped)
- onion (sliced in rings)
For The Dressings
- lime
- honey (1/2 tspn)
- dried basil (1/2 tspn)
- extra virgin olive oil
- salt and pepper
Combine all the ingredients from the dressings and set aside.
Preparations:
- Transfer the mixed cooked beans in a shallow dish.
- Add in the dressings. Mix well to coat all the flavours from the dressings.
- Add in the sliced onion rings in the side.
- Put the coriander leaves at the center
- Serve and enjoy : )
The taste of the coriander leaves, dried basil, and onion gives a zingy and extra flavor to the dish. This vegetables and natural herbs are beneficial in our Respiratory health, They help to moisturise and relieve nasal congestion. It strengthens the intestines and our immunity.
