MEDICINAL GOURMET Cooking Collective Week 1 Heart/Fire Element: Light & Creamy Beet Soup & Stir Fried beets

Practicing a healthy diet and lifestyle definitely brings benefit to our body.

One of the cheapest yet superb vegetable that I always buy in the supermarket are beetroots. This sweet veggie are full of phyto nutrients, vitamins needed in our body, loads of antioxidants to fight radicals.

In here I made a beet soup and stir fried beets.

Beet Soup Ingredients:

Beetroot 2pcs. Medium
coconut milk
1/2 tspn Coriander powder
1/4 tspn. Chili powder
1/4 tspn Cumin powder
1/4tspn Garam masala powder
Turmeric- a dash
Black seed ( optional)
Onion 1pc. Small

  1. Heat wok. Add coconut oil

  2. Add onion, saute a few seconds. Add on chopped beetroot.

  3. Add all spices (coriander, chili, garam masala, cumin,turmeric ) mix till spices covered all the beets .

  4. Simmer till the beets are cooked.

  5. tranfer cooked beets with liquid into a blender. Immerse to make it a puree.

  6. with the Same pan. Heat oil splutter cumin seed black seed, add in beetroot puree.

  7. Add in coconut milk. Mix well.

  8. Add salt. Simmer for 2min. Then switch off fire.
    Your beetsoup are ready! Best accompaniment with chappatti /Indian flat bread or rice.

Stir fried Beets with shredded coconut

Ingredients:

Beetroot 2medium size
Fresh Coconut 4tspn
Mustard seed 1/4Tbspn
Cumin seed 1/4 tbspn
Curry leaves 1-2sprig
Dried chili/green chili
Coriander powder 1 tspn.
Chili powder 1/2 tspn.
Turmeric 1/4 tbspn
Shallots/onion

  1. Heat oil in a wok. Splutter cumin seed & mustard seed.

  2. Add in shallots or onion. Saute a few seconds.

  3. Add in turmeric powder. Add in curry leaves.

  4. Add in chopped beetroot. Mix well. Continue sauteeing.

  5. Add coriander powder, chili powder. Mix well and coat masala to vegetable.

  6. Add in shredded coconut. Add salt.

  7. Cover lid. Cook beets until tender. Mix beetroot from time to time to avoid sticking in the bottom of the pan. Don't overcook beetroot.

Serve beetroot with warm rice or chappatti/ Indian flat bread
