Today's recipe is a pretty basic pumpkin and coconut soup. Now we are back in the Australian winter
and it is soooo cold I just feel like eating soup every day. When I'm not feeling very well and lazy this is my go-to soup recipe.
Ingredients:
- Pumpkin
- a tin of coconut cream
- a pinch of curry powder
- Coconut oil
- coriander optional
I will start by cutting the pumpkin in cubes, then roast them in coconut oil.
Once it is nicely roasted i will turn the stove to low heat, add the coconut cream and add a pinch of curry. I will let it gently boil until the pumpkin is falling apart.
The next and last step is to blend the soup and serve it with sea salt oil and coriander if you like it:)
Very simple and quick and always a winner for me and my daughter, my partner not s much lol he prefers food a bit more consistent than just soup :D
