Many of you who are familiar with some Chinese cooking always have stir fry in your mind. Blame it on the western Chinese cooking shows. Often, one of the more common Chinese cooking method is steaming (again, not steeming). The ingredients (meat or vegetables or both) are usually flavoured by marinading with different sauces and spices. In the case of meat, sometimes they are marinaded for longer time, even over night. Then the ingredients are placed in a steaming container to cook using the steam from the water that is boiled. After the food is cooked, you can add more soy sauce to your taste before serving.
很多人熟悉的中餐总是有煮炒的菜。可能都是西方的中餐烹饪电视节目多数是用这烹调法,往往忽略了蒸煮法。蒸煮的食物通常是菜或肉或两者用各种调味酱和香料腌。肉会腌得比较长时间-甚至腌过夜。然后,准备好得材料放进蒸笼或其他容器蒸煮。 煮熟后,可再随个人口味加酱油才上菜。

Steam egg - the smooth texture is actually not easy to achieve

We were not very hungry then. So we shared a bowl of rice and the meal cost $7.20. Adding a bowl of rice will still cost less than $8. If you give me $8, I'm sure I cannot come out with a mini feast like that. That is one reason why I don't cook much.
You could try to hack this at home rather easily. For minced pork, you can also do it with minced beef. You just experiment by flavour it with your favorite sauces, spice and corn starch and steam it. The steam egg requires beating the egg, adding water (volume of 1.5 times the egg) and soy sauce to your taste. I heard the theory of getting the smooth texture is to remove the bubble before steaming the egg and steaming it over low heat because high heat will cause a sort of
earthquake for the eggs creating bubbles in the process. I could never get it right. If you are successful, please do share your secret.

注1:作这篇时,真的要小心。别把steam(蒸)输入为steem。
