A simple recipe for "podvarak":

Ingredients:

  • 1 medium-sized cabbage, shredded
  • 2 tablespoons oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large carrots, grated
  • 1 can (14 oz) sauerkraut, drained
  • 1 teaspoon caraway seeds
  • Salt and pepper to taste
  • 1 cup vegetable broth
  • 2 tablespoons tomato paste
  • 1 bay leaf

Instructions:

  1. Heat oil in a large pot over medium heat. Add chopped onions and garlic, sauté until softened.
  2. Add shredded cabbage and grated carrots to the pot. Cook for about 10 minutes, stirring occasionally, until the cabbage begins to wilt.
  3. Stir in sauerkraut, caraway seeds, salt, and pepper. Cook for an additional 5 minutes.
  4. Mix vegetable broth and tomato paste in a bowl until well combined. Pour the mixture into the pot.
  5. Add a bay leaf for flavor. Stir everything well, cover the pot, and simmer on low heat for about 40-50 minutes, or until the vegetables are tender.
  6. Check for seasoning and adjust if necessary before serving.
