Ingredients:
- 1 medium-sized cabbage, shredded
- 2 tablespoons oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 large carrots, grated
- 1 can (14 oz) sauerkraut, drained
- 1 teaspoon caraway seeds
- Salt and pepper to taste
- 1 cup vegetable broth
- 2 tablespoons tomato paste
- 1 bay leaf
Instructions:
- Heat oil in a large pot over medium heat. Add chopped onions and garlic, sauté until softened.
- Add shredded cabbage and grated carrots to the pot. Cook for about 10 minutes, stirring occasionally, until the cabbage begins to wilt.
- Stir in sauerkraut, caraway seeds, salt, and pepper. Cook for an additional 5 minutes.
- Mix vegetable broth and tomato paste in a bowl until well combined. Pour the mixture into the pot.
- Add a bay leaf for flavor. Stir everything well, cover the pot, and simmer on low heat for about 40-50 minutes, or until the vegetables are tender.
- Check for seasoning and adjust if necessary before serving.
