How to make Fresh Guacamole like a BOSS!

In the world of food at Christmas time, baking can be the star. But after days of snacking on cookies and chocolates and the 'heavy' stuff, sometimes your body just needs some lighter fare. Enter guacamole. The perfect snacking food at Christmas. It's green, it's easy, and most importantly, it's fresh. Here's my recipe: it doesn't make enough to feed your entire extended family, but it makes enough to satisfy a snack urge, without leaving extra that turns brown in the fridge. And when you're short on fridge space, which we invariably are during the holiday, that's a bonus, too.

Here's what you need:
2 ripe avocados
1 generous tablespoon minced red onion
1 large clove garlic, pressed through garlic press
2 tablespoons chopped cilantro
salt to taste
juice from 1/2 lime

Halve one avocado, remove pit, scoop out the flesh and mash it in a bowl.

Add minced onion, pressed garlic and cilantro.

Mix ingredients together well.

Halve second avocado, remove pit, slice through flesh lengthwise, do the same crosswise to form a cross-hatch pattern. (The point of this is to dice the avocado in an organized and efficient way.) Do the same to the other half. Use a spoon to scoop out flesh and include it in the bowl of ingredients. Add lime juice to the bowl and mix gently to retain some chunkiness. Season with salt.
