Unfortunately I an improvisational cook and baker so trying to write this down as a recipe will not be accurate but I can give you the ingredients and approximate amounts. I wish I could send the smell of it baking to you as that is the very best part.

Use these things, this way, exactly, HA HA!

Since it is cold here in the winter and only rarely gets warm enough to have pourable coconut oil I start this way:

I heat water and add it to the (kitchen aid or bowl) and then add the coconut oil proportionately. So maybe 1 1/2 cups of hot water to dissolve 1/2 cup coconut oil . (The coconut oil accounts for the burned top of the loaf and the wonderful flavor of the bread.)

Today I used about 1/3 cup of honey (or you can use brown sugar or whatever type of sweetener you like)
When the water is cool enough I add a capful (might be a tablespoon or a little less)of dry active baking yeast.
Let it sit until the yeast gets foamy.


Then I start adding the rest of the ingredients in these approximate proportions:

1/2 cup molasses
1 egg (courtesy of Lee our lonely chicken)
1 tablespoon flax seed
1 teaspoon salt


1/3 cup of oat bran
1/3 cup of wheat germ ---I often use more
1/3 cup wheat bran ---maybe not so much as it can make the bread dry
1 cup multigrain flour

Start mixing these ingredients gradually adding enough bread flour until it is doughy and dry enough to knead.
Let it rise until it is double in bulk
Punch it down and knead it again and let it rise a second time. (if we need it soon I may skip the 2nd rising)
Knead it once more and put it on a floury counter top and shape into a loaf
Put it in a greased or sprayed bread pan and let it rise until it is double in bulk.
Today I baked it at 375 for 45 minutes.
