Everyone knows the problem. You want something delicious and especially fresh to eat and don't want to invest a lot of time.
Then try that!
Pasta in chanterelle and white wine sauce
Ingredients (for 2 servings):
- 250g pasta (best Fussili or other short varieties)
- Rapeseed oil
- 1/2 onion
- 1 clove of garlic
- 100g chanterelles
- A dash of white wine
- About 120ml cream
- Vegetable stock powder
- Salt
- Pepper
- Fresh parsley
Preparation:
Cook the pasta in boiling, salted water. Heat oil in a large pan. Chop onions and garlic and braise it lightly in the pan.
Brush the chanterelles and add it to the pan.
Deglaze with a generous splash of white wine and simmer briefly.
Add a little bit cream and let it reduce.
Skim some pasta water with a tablespoon (about 5-7 tbsp) and add it to the sauce(The starch contained therein binds the sauce).
Season it with vegetable stock powder, salt and pepper.
Add the rest of the cream and let it reduce again.
Season it if necessary.
Finally add some freshly chopped parsley.
Drain the pasta, mix immediately with the sauce - done!
