Black Bean Chocolate Brownies

So here is my entry for week four, this is something that my wife and I made a while back but I lost the original recipe. So after a bit of Googling I found one that was about the same as the previous one and can be found here. It is a ridiculously simple and quick recipe and it tastes great.

This batch didn't quite come out as awesome as the previous one but I think it might be due to a small mistake I made. I think it fell a bit flat because I put it in the fridge to set instead of letting it cool on its own, but nevertheless it is delicious and worth a try.

These brownies can be made vegan when the honey is substituted with maple syrup, as far as I know the only bad thing in this is the sweetener and the chocolate. Here is the recipe:

  • 1/2 cups black beans
  • 2 tbsp cocoa powder
  • 1/2 cup quick oats
  • 1/4 tsp salt
  • 1/3 honey (maple syrup can be substituted)
  • 1 satchel uncut Stevia
  • 1/4 cup coconut (vegetable oil can be used if not a fan of the coco-nutty taste)
  • 2 tsp pure vanilla extract
  • 1/2 tsp baking powder
  • 1/2 cup to 2/3 cup dark chocolate chips

It is one of the easiest ways to make a desert, the hardest part is cleaning up the mess.

Step 1:

Rinse the black beans thoroughly and measure out all the other ingredients. Preheat the oven to 180 Degrees Celsius or 350 Fahrenheit.

Step 2:

Throw everything in a blender (except the chocolate pieces/chips, save those for later). Note - It helps to give the oats a bit of a blend beforehand. Then blend everything together till it is as smooth as your blender can get it.

Step 3:

Spray your oven pan/tray with a non stick spray and throw the batter into the pan. Spread it out as evenly as possible and finally add the chocolate chips.

Step 4:

Place it in the oven and let it bake for 15 Minutes.

After 15 Minutes test it with a pin, if it sticks to the testing pin let it bake for another 3-5 minutes. When done you should let it cool for at least 10 to 15 minutes. Cut and serve.
