Chicken salad with avocado- Day 3 [Week One of Six Week Health]

Happy day community, my entrance to the challenge initiated by @healthsquared, is with a delicious dish: Chicken salad with avocado.

Ingredients

Chopped chicken breast
1 ripe avocado, peeled and boneless
1 apple peeled and without
¼ cup of celery
¼ cup onion
Parsley or cilantro
2 teaspoons of lemon juice (or lime)
Salt
Ground black pepper
Olive oil

Elaboration

Cut the chicken breast into small pieces and sauté in a pan with a little olive oil. Reservation.
Chop the avocado, the apple, the celery and the onion. Reservation.
Place the pieces of chicken, avocado, apple, celery and onion in a bowl.
With the help of a fork, mash the avocado and mix it with the rest of the ingredients until it forms a kind of paste.
Add the parsley (or cilantro), the lemon juice (or lime), salt and pepper and mix well. You can add more juice or even olive oil if you see that it is too dry.
Serve with bread, toast or some type of green leaf for salad, such as lettuce, watercress, purslane


Note: you can keep it in the refrigerator covered with transparent film.
You can keep an avocado and fill it.
