Week Four of the Six Week Health Challenge Initiated by @healthsquared

Vegan cookies with orange and ginger 🍃🍊

INGREDIENTS

1 cup of wholemeal flour

1 cup of traditional oatmeal

1 tablespoon of stevia

30 gr. of No-egg (replaceable by Linseed flour, or, a ground banana)

150 ml of Soy milk

30 gr. flaxseed

30 gr. of orange cest

1 tablespoon ginger powder

1 teaspoon of cinnamon essence



1. Mix soy milk with no-egg (or its proper replacement) plus stevia, cinnamon essence and ginger spoon. Mix 5 minutes with electric mixer. Add the flaxseed.

2. Incorporate flour and oatmeal at the same time. Mix, again, with blender another 5 minutes.

3. Preheat the oven for about 5 minutes and put the cookies in a tray. The mixture is rather solid, so you can use a spoon to take out equal portions. Bring to a high heat for about 25 minutes.

4. Remove and wait for them to cool ... Or try to wait because they are very good and rich
