Day 4 [Week One of Six Week Health]-Thai meatballs.

Hello dear community, today my first publication on the initiative of the challenge by @healthsquared.
My entry is with the recipe: Thai meatballs.



From now on I can say that I have the perfect recipe for meatballs, and this is it. Thai meatballs!

They are marinated meatballs with peanut, coconut and fish sauce, a very Asian mixture, surprising and delicious.

To accompany them I prepared some baked potatoes, totally healthy, without any fat with black sesame and chili.

Ingredients:

For the meatballs:

350g of minced meat (I put veal)

1/2 soup of chopped fresh coriander

1 clove garlic

30ml of fish sauce

Vegetable oil for frying

For the sauce:

1 clove garlic

1/2 red chili minced

1/2 spoon grated ginger dessert

30ml of fish sauce

1/2 tablespoon of fresh cilantro

1 tablespoon peanut butter

1/2 tablespoon of palm sugar

65ml of coconut milk

1 teaspoon basil

2 tablespoons of vegetable oil

For the accompaniment:

4 white potatoes

1 tablespoon black sesame

1 teaspoon chili powder

2 tablespoons of extra virgin olive oil

1 pinch of salt

Step by Step:

  1. Prepare the mise en place. Have prepared everything you need for the recipe, with all the ingredients measured.

  2. In a bowl mix the minced meat with the cilantro, finely chopped garlic and fish sauce. Mix until a homogeneous paste is obtained.

  3. With wet hands, form 16 medium balls with the meat mixture.

  4. Heat the oil in a pan and fry them in batches, until golden brown, for 5 minutes. Reservation.

  5. Prepare the sauce: Drain the oil from the skillet that you used to fry the meatballs, sauté the minced garlic over medium-low heat with the chopped ginger and the chili.

  6. Add the remaining ingredients of the sauce and cook over medium heat for 5 minutes. Stirring occasionally. As the time goes by the sauce will thicken.

  7. Remove the sauce from the heat and place the meatballs on it. Mix and serve hot.

To prepare the garnish, preheat the oven to 180ºC, wash the potatoes carefully and without peeling cut them into slices and each slice into strips.

Brush the baking dish with extra virgin olive oil. Place the potatoes in a bowl, pour the oil, sesame seeds and salt. Stirs well.

Pour the potatoes in the oven and bake for 15 minutes. After 15 minutes, remove the source from the oven, turn the potatoes over, sprinkle the chile on top and bake 15 more minutes.
