Healthy stuffed potatoes with vegetables: Day 4 [Week one of six weeks health]

In addition, the potato has significant amounts of vitamin C, which strengthen the immune system and help us prevent diseases. And what better combination with vegetables that are so rich in vitamins, minerals and antioxidants?

Ingredients

5 potatoes

1/2 diced green paprika

1/2 red pepper, diced

1 grated carrot

1 finely chopped scallion

1 cup cooked spring salad

Oregano

Full dressing

Oil

Salt

Preparation

Wash, peel and chop the potatoes in squares, cook with plenty of water until soft. Grind to a puree, add a tablespoon of oil, a pinch of salt. Reserve.

Sauté the onion, carrots, peppers with a little oil, add the spring, previously cooked in water, season and let warm.

Form a small ball with the puree and hollow in the middle, add the sautéed and cover with more puree, once the balls are done, bake until golden brown. Serve hot.
