Hi dear community of food and healthy desserts, I am very happy to participate in this contest and to show you how to prepare this delicious and healthy recipe: Carrot and Coconut Truffles. I decided to share my recipe in this wonderful Challenge #sixweekhealth organized by @healthsquared and @sweetsssj
This recipe is high in fiber, very easy to prepare, and uses few ingredients, ideal for our children and our snacks, I hope you like it and enjoy it.
- 2 large carrots
- 1 orange
- 150 grams of dehydrated coconut or coconut flour
- Sweetener to taste (we use stevia)
- 100 grams of dark chocolate without sugar
1- Peel the carrots and cut them into large pieces.
2- Cook in water that overflows until soft.
3- Crush and form a puree.
4- Add the dehydrated coconut.
5- Add the orange juice.
6- Place the sweetener to taste.
7- Arrange more coconut on a plate and reserve.
8- Mix ingredients well.
9- Form the balls and press to remove excess liquid
10- Pass them through the coconut covering them completely and refrigerate.
This is the result:
We turn them into Chocolates:
1- Cover a tray with film or wax paper.
2- Melt the chocolate and pour it in a small bowl.
3- With the help of a fork sink the balls into the melted choco.
4- Place the chocolates carefully on the tray.
5- Refrigerate 15 minutes and go.
They are a healthy vice, good profit!
