Hello friends in today's challenge I present you with a delicious and healthy dessert. Sometimes it is necessary to eat a dessert, but sugars and excess carbohydrates are harmful to health and especially for diabetics and obese; so I bring you the recipe for this dessert which offers health benefits because it is prepared with a vegetable such as pumpkin and sweetened with stevia.

Benefits of stevia as a substitute for sugar

People who habitually consume stevia to sweeten their infusions (tea, coffee, roobios, chamomile, etc.) or their food in general, as a substitute for sugar and artificial sweeteners, since stevia contributes zero calories to our diet, and It is the only natural sweetener totally safe for regular consumption and for life when sugar is contraindicated, as is the case of diabetics and people who follow a diet of prolonged weight loss.

Recipe for pumpkin cake without sugar with stevia

Ingredients

300 grams of roasted or mashed pumpkin in pure.
125 grams of flour
4 eggs
20 grams of stevia, dissolved in a cup of water
A splash of olive oil
1 envelope of yeast
Half a small spoonful of cinnamon powder


Preparation

We put the oven to preheat to approximately 180 degrees. Meanwhile, we will prepare the dough of our cake, cake, cake or pumpkin pie, as we want to call it. For this we are going to take the glass from the blender and add the eggs, the stevia and the oil. Remove at medium speed for a couple of minutes until the mixture becomes homogeneous.

Then add the pumpkin, previously roasted or cooked, in addition to the flour, cinnamon and yeast. With the help of a spatula we can take the remains that remain on the edge of the glass and join it to the rest of the dough. We continue beating very carefully so that no lumps remain.

When a few minutes have passed, our cake dough will be ready. Now we just have to pass it to the mold we choose (This one I love and if you open it you will know why), that unlike other recipes we have not greased with butter, but with flour, so we have to pay special attention to the time to avoid and that our cake stays stuck.

We have to make sure the oven is hot. If yes, we introduce the mold and let it cook for half an hour. As usual, you should click in the middle of the cake to see if it is made. If the surface of the stick or knife you use is stained with dough, then it is necessary to leave it for a few more minutes.
