Hello dear healthy food community, it is a pleasure for me to participate in this contest that fills us with creativity to prepare those nutritious and healthy foods that keep us healthy, thanks @healthsquared for the initiative.
My entry is with the recipe: tomatoes stuffed with quinoa.
Ingredients
4 medium round tomatoes
100 gr quinoa
1 bunch of chives
1/2 red bell
4 tablespoons tomato pulp
3 tablespoons hummus (chickpea puree) or mayonnaise without TACC
4 black or green olives
sea salt
Pepper
Preparation mode:
1.-We wash several times the quinoa, to avoid that in the cooking take a bitter taste.
2.-We boil in plenty of water and a little salt.
3.-Cut the tomatoes on the top in a flat shape and hollow out the tomato pulp.
4.-Place the chopped ciboulette in a bowl, the morrón, the tablespoons of hummus or mayonnaise, the tablespoons of tomato pulp and the drained quinoa.
5.-Add salt and pepper to taste, mix well and fill the tomatoes.
6.-Place a bit of hummus or mayonnaise on top, and decorate with a black olive, take to the refrigerator and serve well fried. We can accompany with spinach, chopped fruit.
