Hello my dear steemians, we are again here at the @healthsquared challenge along with @sweetsssj this week we have had a spectacular theme as are healthy desserts, I have been very excited about it, I could hardly wait to show you my healthy recipe of pumpkin pie.
To lead a more responsible life with food is something I have proposed for a while and I like it a lot, before I did not mind eating a lot of sugar at once but now I am unable, and to take care of my health I have re-educated myself. The pumpkin is an ingredient that I love to include in my desserts, since it brings a lot of fiber, nutrients and if that were not enough, it is very low in calories.
I started working on the adaptation to make my dessert healthy and I loved the result, the ingredients I have used are:
Neutral powder gelatine (7 grams)
Natural peanut butter
3 Eggs
300 ml of coconut milk
2 tablespoon of corn starch
1 tablespoon of stevia extract (95%)
1 spoon of vanilla
Cinnamon to taste
Preparation:
First cut the pumpkin into pieces.
We put it to boil until it is soft.
We take it out and make a puree.
Then in a bowl, add the puree, neutral gelatin, coconut milk, a little peanut butter, three eggs and two tablespoons of corn starch and beat until you get a homogeneous mixture.
we add the stevia and continue beating.
Flour the tray with a little corn starch and butter so that the pie does not stick.
We proceed to include vanilla and cinnamon and beat without stopping.
Pour the mixture into the tray and take it to the oven, preheat it before 220 degrees and introduce our dessert for 45 minutes.
After the usual schedule, we take our foot and this is what we get.
We chill it for 1 hour, cut a piece and enjoy our healthy pumpkin dessert. Remember to eat a small portion because even though it is healthy, we can not subject our stomach to large amounts of food.
