VAPOR FISH WITH TAUSÍ

Ingredients

  • 2 lbs. of fresh fish - 50 grs. of tausí - 2 cditas. of ground kión - 6 Chinese onions - 3 tbsp. of olive oil - Salt and pepper - 6 twigs of cilantro - 3 tbsp. of sillao - ½ dram of white wine

Preparation

Clean the fish well, then cut it into individual portions and arrange them in a source that can withstand the heat of the oven.

Spread on the fish, first salt and pepper, then sillao; after the kión; the tausí, the white wine and the oil.

Place this container inside a larger one with enough water to cover two thirds of the mold, and let it simmer for 30 minutes or so or until the fish is ready.

Transfer to a dish and garnish with the Chinese onions cut into 1 centimeter pieces and the culantro leaves.
