Pineapple Mojito Green Smoothie

A tropical, satisfying, and delicious smoothie that tastes similar to a mojito and disguises a whole plate of healthy greens!

We had this drink for breakfast, so we didn't add rum to it, but nothing stops you from adding a splash (or two) to make a semi-healthier version of the classic mojito.

Ingredients

  • 2 cups kale
  • 2 cups unsweetened coconut water
  • 3 cups pineapple
  • 1/4-1/2 cup fresh mint leaves, or to taste
  • 1 lime or lemon peeled and seed removed (use less if using lemon)
  • 1 tbsp chia seeds (optional topping)
  • 2 tbsps dried goji berries (optional topping)

Instructions

  1. Blend kale and coconut water until smooth. Add remaining ingredients and blend again.
  2. Top with chia seeds, goji berries, flax seed, hemp hearts, etc., if you like.

Recipe Notes

  • Use one or more frozen fruits to chill the smoothie.
  • If the smoothie is too thick for you, add more liquid base.
  • If you have a high-speed blender you can throw in everything at once.
