Ingredients for 1 person
- 1 litlle courgette
- 2 slices of lonzu (if you can't find 😡, pork belly will do)
- 100 g fresh sheep's milk cheese
- 1 sweet potato
- Olive oil
- Chives
- Basil
- Salt and pepper
Directions
STEP 1
Preheat your oven to 200° C. (400° F approx)
Prepare the vegetables:
Wash, wipe the courgette, cut the ends and cut them into thin slices. Set aside for baking.
Wash the sweet potato and peel. 💪 Dip in a saucepan with cold water and salt.
After boiling, cook for 20 minutes.
Insert the point of knife to check if sweet potatoes are soft.
Cool in ice-water then crush with a fork to make a coarse mash.
STEP 2
Place the courgettes slices on a baking sheet with parchment paper. Brush with olive oil. Cover with foil.
Cook for about 5 min. Courgettes must remain crunchy.
Put the slices of lonzu (belly) in the oven to brown for 5 minutes. under the grill. Turn halfway through cooking.
STEP 3
Mix the goat's cheese with a fork, add 1 tsp of olive oil and season with salt and pepper.
Add chives and finely chopped basil.
STEP 4
You now have everything you need.
Training:
Place the sweet potato in a circle.
1- Put a slice of lonzu on top.
2- Put a layer of courgettes on top.
3- Put a layer of cheese on top.
Repeat this operations (1, 2, 3) once more.
Finish with a corolla of courgettes.
Take care of the decoration!!!
For my decoration I put red dots (a reduction of tomatoes and red peppers), yellow dots (corsican honey 😃) and a sweet potato mash.
