Cauliflower?! What's it doing there!!!
Cauliflower is an extremely versatile vegetable. I've been enjoying eyeballing some of the entries that popped up this week! Cauliflower pizza, Cauliflower Falafel, Roasted Cauliflower!! Those had been on my thoughts of possible entries to make, and I scratched each one off as posts popped up! =)
So what do I make. . .? Well, a party is happening tomorrow, and I'd wanted to bring a dessert! What better way than to kill two birds with one stone?
After all, from my research, the addition of cauliflower helps to create bulk, making for a low-carb brownie with a mild nutty flavour. Surprisingly, the texture was both fudgey, light, and tender! Perfect served hot with a scoop of ice cream!

Light Chocolate Brownies with an Angelic Surprise
These delightful treats are light in both carbohydrate content and texture. A layer of molten white chocolate makes for a pleasant surprise when you cut a cross-section!
Component #1: Light Chocolate Brownies
While chocolate is the main theme, these brownies are flavoured and improved in texture with creamy peanut butter and cauliflower puree!
Ingredients Used in the Light Chocolate Brownies
Cauliflower Florets, chopped small
Chicken Eggs
Cream Cheese
Creamy Peanut Butter
Dark Chocolate, melted
Raw Sugar
Plain Flour
Tapioca Starch
Cocoa Powder
Baking Powder
Sea Salt
Vanilla Bean, freshly grated
White Chocolate, chopped into small pieces
How to Make the Light Chocolate Brownies
Steam cauliflower florets till tender (20 min). Let cool and blend into a puree.
Use a spoon to mix in eggs, peanut butter, cream cheese, and melted dark chocolate.
Preheat oven to 176°C. Grease a baking form.
Combine all dry ingredients in a bowl, and mix very well.
Pour dry ingredients into wet ingredients. Mix with spoon till smooth.
Spread half the brownie mixture evenly in the baking form. Scatter white chocolate bits over the brownie layer. Top with the remaining brownie mixture.
Bake till set (35 min).
