Why this soup is very healthy, not only because of the healthy fresh tomatoes:
How to cure a cold with garlic
Ingredients I used for my own tomatoe soup recipe:
- Fresh tomatoes: 3 normal tomatoes
- 13 little mexican honey tomatoes from my balcony
- 1 Fresh hot chili from my balcony
- Sieved tomatoes
- 1 tin of peeled tomatoes
- 4 pieces garlic
- 4 Onions
- 3 teaspoons red pesto
- 1 teaspoon mustard
- tomatoe paste
- Balsamic vinegar
- Emmental cheese
- Fresh Basil
- Salt & Pepper
- Italian spices
- Olive oil
- Toasts
Preparation:
Peel the garlic and onions. Halve the tomatoes and cut the onions, the chili & the garlic pieces into smaller pieces. I peeled off the big normal tomatoes too.
Now heat some olive oil in a pot and add the onions first. Fry them for about 3 minutes and add the tomatoes. Then add the sieved tomatoes and the chili. After some minutes of cooking, add the garlic, some basil, italian spices, one tablespoon balsamic vinegar, some tomatoe paste, 1 teaspoon mustard, 3 teaspoons red pesto and taste everything with salt & pepper. Cook it about 5 minutes more and then use a hand blender to mix everything well. Here is a picture how I mixed it:
Now distribute the soup on plates and sprinkle it with emmental cheese & fresh basil.
Ready is the healthy and delicious tomatoe soup!
I enjoyed it with some toasts and a great Berlin beer, called "Berliner Pilsner".
