SUMMER WINE CAKE Inspired by a song by Nancy Sinatra
Cake:
2 cups sugar
1 cup butter
2 eggs
1/2 cup Cherry Kefir
1 tsp almond extract
Cream the butter and sugar. Add the eggs, Kefir, and extract. Mix well. Set aside. These are the wet ingredients.
2cups flour
1 tsp soda
1 teaspoon salt
Sift the dry ingredients together and add 1/2 to the wet ingredients . Mix well. Follow with the second addition.
Pour into greased and floured 8 " cake pans. Bake about 30 minutes at 350*
When cakes are baked, allow to cool. Place bottom layer on a platter. Slice strawberries 1/4 inch thick and place on top of the bottom layer.
Filling:
4 oz. Cherry Kefir
3/4 cup sugar
1/2 cup dried cherries
Cook these 3 ingredients in a sauce pan until the cherries have plumped ad the liquid has gotten thick as an ice-cream topping. Remove from heat and add:
1 oz. Strawberry wine
1/2 teaspoon almond extract.
Stir until well combined. Set aside to cool to touch. When cool, spread on top of the sliced strawberries.
Place second cake layer on top of filling. Prepare Glaze
Glaze:
1/2 cup cherry Kefir
6 oz. white chips
Melt these two items together in a stew pot and melt, stirring till well mixed. Remove from heat and add:
1/2 tsp. almond extract
1 oz. strawberry wine
Mix together and drizzle on top of cake. While glaze is still tacky, press strawberry halves and cherry halves into the wet glaze in a decorative pattern.![glaze.jpg]
