For the entrance of this week I decided to make a vegan dish, taste and very healthy.
Lentils are legumes low in calories, healthy, without fats. Lentils, vegetables, mashed potatoes and baked. A different way to eat these iron-rich legumes.
Let's start!!
Ingredients
300gr lentils.
A onion.
A Red and a green pepper.
2 tomatoes.
2 cloves of garlic.
3 bay leaves
a piece of pumpkin.
2 carrots.
3 large potatoes.
extra virgin olive oil.
Salt
pepper.
Water.
Oregano
Now step by step:
we soak the lentils for 8 hours
The legumes and especially the thin skin that covers them, contain oligosaccharides (a type of carbohydrate) whose molecule is formed by several molecules of simple sugars, such as galactose.
Humans do not possess enzymes capable of breaking down these oligosaccharides in our intestines. Colon bacteria, especially those of the genus Clostridium, do decompose them by converting them into gases such as carbon dioxide, hydrogen and methane.
drain the lentils
Put the lentils in the pot with all the vegetables except the potatoes
Add the salt and olive oil, cover all the ingredients with water.
cook 20 minutes in an express pot or 40 minutes in a normal Pot
On the other hand, boil the potatoes in pieces for the puree
crush the lentils
Make the mashed potatoes, mashing and adding salt, oil and pepper
In a baking dish put the mashed lentils, on top of the potato, sprinkle oregano and grill for 10 minutes.
Ready to eat!!
