Steemit Culinary Challenge #37 - Healthy Little Golden Fritters for Little Fingers

Healthy Yet Tempting Food for Children - Although I don’t have any children of my own yet, I was once a kid too (LOL). When I was little, I remember loving finger food. In particular, I enjoyed picking out little & tiny food items and played with them (Not sure the adults were happy about that!). I also loved colourful food as well as any dishes I got to help prepare.

For this week’s culinary challenge, I have decided to make a vegan dish using corn. Even as an adult, I love picking out the corn and put them into my mouth individually. Thought kids might like this one. This is not my recipe, but I forget where I got it from.

It is very easy to make and moms won’t need to labour for hours in the kitchen. Time is precious, why not spend more time with your precious kids! You could even get your kids help mixing the ingredients together. How fun!

I like to serve them with vegetables of different colours. Tonight, I have purple beets, green beans, red tomatoes and green cucumber.

Ingredients:
4 Zucchini (shredded), 1 1/2 cups Corn, 6 Green Onions (chopped), 3 Garlic Cloves (minced), 1 1/4 cup Chickpea Flour, 2 Eggs, 2 tsp Cumin, 1 tsp Oregano, 1 tsp Thyme, 1 tsp Salt, Pepper, Water if required

Methods:
Combine zucchini, corn, green onions, chickpea flour, eggs, cumin, oregano, thyme, salt & pepper. Add water if required. Use a 1/4 measuring cup, scoop the mixture into the pan and fry for 4 minutes on each side.
