No wheat Sweet potato veggie burger

Ingredients for sweet potato buns:
250g of sweet potatoes
20g of fresh beer yeast
5 tablespoons of spelt flour
2 teaspoons of honey
1,5dl of warm water
300g of spelt flour
3 tablespoons of melted butter
1 teaspoon of salt
2 teaspoons of curry
1 egg
1 teaspoon of water

Ingredients for beans patty:
400 g of red beans
1 tablespoon of chopped red onion
1 garlic clove
black pepper
red sweet grind paprika
cayenne pepper
turmeric powder
cumin
soy sauce
chili
1 teaspoon of salt
3 tablespoons of hemp flour
2 tablespoons of olive oil

Ingredients for sesame cheesy onion rings:
2 onions
2 tablespoons of spelt flour
50g of cheese
1 egg
a pinch of salt
1 tablespoon of sesame seeds
3dl of sunflower oil

Other ingredients:
a few lettuce leaves
100g of tomatoes
1 onion
1 green paprika
1 small zucchini pumpkin
1 tablespoon of olive oil
100g of cheese
1 tablespoon of mustard
3 tablespoon of mayonnaise
1 tablespoon of soy sauce
3 tablespoons of ketchup

Peel 250g of sweet potatoes, cut it and boil it in salted water for 30- 35 minutes. Pour away the water and mash it with potato masher and let it cool.
Mix 1,5dl of warm water (around 30 °C) with 5 tablespoons of spelt flour, two teaspoons of honey and 20g of fresh beer yeast. Leave it in a warm place (up to 35 °C) and wait until it rises.
Mix mash sweet potatoes with 300g of spelt flour and yeast. Add three tablespoons of melted butter, one teaspoon of salt and two teaspoons of curry. First start mixing it with a spoon then knead it with your hands. Add some spelt flour if needed.
Leave the dough in a warm place (up to 35 °C) until it rises.
The dough rose enough when it gets as ones bigger as it was.
Knead it again and cut it on quarters. Then cut them on quarters again. Make a ball out of all the pieces and put them on a baking tray covered with baking paper. Leave it in a warm place to rise again then put it in the oven heated on 180 °C for 20 minutes. Mix an egg with a teaspoon of water and cover your buns with the mixture. Put the buns back to the oven for another 10- 15 minutes.

Cook 400 g of red beans (or use canned beans) and mash it. Add one tablespoon of chopped red onion, one chopped clove of garlic and the spices (red sweet grind paprika, black pepper, cayenne pepper, turmeric powder, cumin, a tablespoon of soy sauce, chili and a teaspoon of salt) and mix it with a spoon. Form burger pattys out of it. Add some hemp flour to make them thicken. Spray it with 2 tablespoons of olive oil and fry them in a pan or bake it in an oven on 200 °C for 10 minutes.

Cut two onions on slices. Grate 50g of cheese and shake it on onion slices. Slightly press it so it sicks on the onion rings. Shake them with two tablespoons of spelt flour. Mix 1 egg with a pinch of salt. Deep onion rings in mixed egg and shake them with 1 tablespoon of sesame seeds. Deep-fry them in 3dl of sunflower oil.

Clean and cut vegetables: a few lettuce leaves, 100g of tomatoes, one onion and one green paprika and one small zucchini pumpkin. Fry sliced pumpkin on a tablespoon of olive oil. Grate 100g of cheese. Mix one tablespoon of mustard with three tablespoons of mayonnaise and 1 tablespoon of soy sauce.

Cut sweet potato buns on half and spread mustard sauce on the bottom of brad. Add one lettuce leaf, slice of tomato, few onion slices, green paprika slice and two slices of zucchini pumpkin on each burger. Put some grated cheese on it and add beans patty. Add some more grated cheese and a bit of ketchup on top. Cover it with the top of a sweet potato bun. Serve it with sesame cheesy onion rings.
