So now we can start counting the survivors from Hurricane HF20 - gosh but that was one hectic storm and am I glad that I could make my sandwich as usual for all the guys and dolls from the SSC community this week!
This one was a Coconut Chia Crumpet experiment and it worked, was absolutely scrumptious with crispy crunchy toasted Chia Seeds on one side and Coconut flakes toasted golden on the other side.
I had some lovely ripe Bananas, a gift from a friend's tree - no refrigeration so the flavour was really gorgeous and how a Banana should taste. I paired this with Cream Cheese, finely grated Cheddar Cheese for a touch of saltiness and drizzled it with Honey to make a Banana Honey Cheese & Coconut Chia Crumpet Sandwich.
Note I'm calling this a Crumpet sandwich, but in your country it would be called a Pancake sandwich. It sometimes is called Flapjacks here - but what you call Crepes, we call Pancakes!
Think I've really confused things now, not so!
INGREDIENTS
- Coconut & Chia Pancakes - recipe below
- Cream Cheese
- Banana
- Cheddar Cheese, grated
- Honey
Buttermilk Pancake batter
Beat together till light & fluffy
- 3 Eggs
- 3 tablespoons Brown Sugar
- 2 ml Vanilla Essence
Add & mix - 3 tablespoons melted Butter
Sift together - 375ml Self Raising Cake Wheat Flour
- 5ml Baking Powder (not baking soda)
- 1/4 teaspoon Salt
Add dry mixture to egg mix alternately with - 250ml Buttermilk
Do not over mix at this stage.
Place a tiny amount of grape seed or olive oil in a small pan, heat & cover base of pan with Chia Seeds.
Pour batter in once pan is hot, careful not to burn the seeds.
Sprinkle batter with Coconut flakes.
Turn with spatula when bubbles start forming to cook the other side
Now for the fun part - some Banana tricks and fun facts on Bananas and then on to the assembly line.
Did you know that you don't have to use a knife to slice a Banana?
Simply peel the fruit, push your finger into the top of the Banana and as if by magic you will see it parts into three segments. Apparently Banana is the only tri-segmented fruit in the world!
Another Banana fact - Murder by Banana and Bees - Never take Bananas on a picnic in the countryside, especially if there are bees around. The reason is that just after a Bee has stung someone, the Bee gives off a hormone that smells similar to Bananas so if they smell it, they can go into attack mode.
LOL...You can of course do this if you have murderous intent and your victim is allergic to bees, but please don't ;)
And always remember, should someone be stung by a bee and they show an allergic reaction, best get them to your nearest medical emergency centre as a matter of urgency as it can be fatal!
The assembly line
Spread a generous layer of Cream Cheese on Crumpet
Top with Banana segments
Drizzle with Honey
Follow with finely grated Cheddar Cheese
Seal with another Crumpet, Chia seeds facing on top
Drizzle extra Honey over the sandwich

My hand model hubby only too happy to be back on the job - he's diabetic but had a sugar low so could tuck into half a sandwich and get his sugar levels back to normal in a jiffy :)
