Victoria Sandwich Cake 🍰 Easy sponge cake recipe

This Victoria sponge recipe is the perfect quick and easy classic cake for a birthday, wedding or weekend bake 🙂

Today I have for you my Victoria Sandwich Cake. It's a classic that I've changed up a little because I always think it ends up to thick. So I tried a little trick that collapses the mixture slightly without changing the sponge texture....and the secret ingredient?!....drumroll please....ddidididididididididididid....WATER! Crazy right?! Not really as you'll see.

Onto the recipe!

Ingredients:

4 Eggs
3/4 cup caster sugar
1 cup self raising flour
1 tablespoon cornflour
1 1/2 teaspoons melted butter
1/3 cup warm water
1 tablespoon icing sugar, sifted

Filling:

1/2 cup strawberry jam (or any flavour you wish)
1 cup thickened or heavy cream, whipped

Method:

1. Preheat oven to 180c (160c fan force, 350f, gas 4)

2. Place eggs in a bowl (I used a stand mixer, it's much easier but an hand electric one will do fine also) and beat until thick and creamy. Gradually beat in caster sugar and continue beating until mixture becomes thick. This will take about 10 minutes.

3. Sift flour and cornflour together, then fold in gradually over egg mixture. Stir in 1/3 cup warm water and the melted butter gradually as well.

4. Divide mixture evenly between two buttered and lined 20cm (8in) round springform cake tins.

5. Bake for 20-25 minutes or until cakes shrink slightly from the sides of the tins and spring back when touched with the finger tips. Stand cakes in tins for 5 minutes before turning onto wire racks to cool completely.

6. To assemble, spread one cake with jam, then top with whipped cream and other sponge cake. Just prior to serving, dust cake with icing sugar and serve with fresh strawberries.

As you can see everything is in proportion, which I love. If you want that thick fluffy version just leave out the water - easy!

I also want to mention this strawberry jam is homemade - my mum loves making jams so if you want the recipe let me know and I'll attempt to steal it from her, it's soooooo good 😋
