This week challenge was Ice Cream and I knew exactly what to do:
A guiltless raw vegan ice cream sandwich :D

For the cookies
2 C cashews
2 C almonds
1/2 cup maple syrup
1 tsp vanilla
1/3 C coconut oil
1 pinch salt
water as needed
we will break down the cashews and almonds to get a flour consistency. Or more texture if you decide. Then we add the rest of the ingredients and combine thoroughly, remember to add water if too heavy. We want a doughy consistency but we also want to protect our equipment.
Working with all these nuts can be dangerous for your equipment. So always add water or thin it out somehow when you think your equipment is having trouble to process them.
Once we get to the consistency we want we will spread them onto our paraplex papers to dehydrate for around 1 day.
For the Ice Cream
325 gr coconut meat
325 gr pre-soaked cashews
80 gr turbinado sugar (or honey if honey flavor)
40 gr coconut oil
1 tsp vanilla extract
Sorry I don't know what happened but I couldn't find the pictures :D anyway hahaha
It is the same as my mango cheesecake or chocolate pudding with out the flavors...
Or flavoring it how we decide.
We will blend everything in a high-speed blender until soft and creamy.
For the chocolate sauce
1 1/2 C olive oil (I used avocado)
2 C maple syrup
1 1/2 C cacao powder
pinch of vanilla
pinch of salt
We will blend all this until incorporated and thick, Oil will thicken it if too thick you can water it down a little bit or maple it down.
