A gluten free lasagne - the @fat-elvis way

Hi everyone, another food post tonight. Today I decided to make a lasagne, but instead of the usual way, I wanted to try gluten free noodles. And let me tell ya, they're a bit stickier than regular durham wheat noodles, I had a bit of an issue getting them apart after boiling them a bit!

Started by cooking down some tomatoes, pureed and about 30mins with some sugar and salt, parsley, and a dash of oregano

And browning some lean ground beef with onions and pureed mushroom ( my wife won't eat mushrooms if they aren't pureed).

Alright let's build it. Got out a 9"x13" baking dish, and put a little sauce in the bottom and a layer of noodles. Followed with a layer of ground beef with a bit of sauce, and another noodle layer

Followed that with another beef layer and another noodle layer, then spinach and soft unripe goat cheese, with a bit of sauce.

Another layer of noodles and topped with sauce and fresh basil. Mmm nothing else like fresh basil!

Then topped with a plethora of various cheeses.

Cooked at 350*F for about 45 mins.
