Lumpiang Sariwa
A quickie post- an ATM (at the moment) kinda thing. Got dinner prepped in a jiffy too. Glad hubby @kennyroy loved it. š
I noticed the bean sprouts I bought yesterday was becoming bad, calling for me to cook them. It's been a while I did not make lumpiang sariwa so I just gathered what veggies I had in the kitchen:
ā¢ mung bean sprouts
ā¢ carrots
ā¢ purple potatoes
ā¢ iceberg lettuce
For the lumpia wrap, just mix together the following ingredients and cook, spread evenly on a non-stick pan.
ā¢ 2 eggs
ā¢ 1 cup all purpose flour
ā¢ 1 1/2 cups water
ā¢ 2 tsp canola oil
For the sauce, bring to boil soy sauce, sugar, water and minced garlic mixture. Add cornstach slurry to thicken sauce.
Would be nicer if you'll have ground peanuts for toppings. Nonetheless it would still be good otherwise.
