It’s National Blueberry Pancake Day! Let’s celebrate and start the day with our quick and easy blueberry pancake recipe. 🔥
Who doesn’t love starting the day with a pile of piping hot blueberry pancakes? These pancakes are so quick to put together and can be made even healthier by just adding a scoop of protein powder.
This is also so easy to make exactly how you would like, you can put on any toppings that you like. Coconut yoghurt, fresh fruits, chocolate sauce and the list goes on and on. The options are limitless here.

Ingredients
• 1 1/4 cups of plain white flour
• 2 teaspoons baking soda
• 1/4 teaspoon baking powder
• 3 tablespoons maple syrup
• 1/4 teaspoon salt
• 1 teaspoon apple cider vinegar
• 1 cup plant milk
• 1 cup fresh or frozen blueberries
• Oil for frying
Method
- Heat a skillet or frying pan over low-medium heat. Once the pan is hot add some oil (1/2 tablespoon should be fine) and allow it to heat up.
- In a bowl, mix together the apple cider vinegar and plant-based milk, set aside
- In a large icing bowl, sift together the flour, baking soda, baking powder, sugar and salt.
- Make a well in the middle of the dry ingredients and pour in the milk and vinegar mixture. Mix the batter together with a whisk until smooth and there are no lumps remaining. Finally mix in the blueberries. If you want to have a stronger blueberry taste, crush some of the blueberries with a spoon before mixing them into the batter.
- Your pan should be warm enough by now so take a 1/4 cup measure (1/2 cup if you prefer larger, thicker pancakes) and scoop up some batter. Pour it into the hot pan in a circular motion and try to get the mixture to form a round pancake shape.
- Leave to fry for about 8 minutes on the one side, then flip over with a spatula and cook for a further 3-5 minutes.
- Remove and cover with aluminium foil to keep them warm while you’re making the other pancakes.
- Serve with your toppings of choice - I always go for some maple syrup, fresh blueberries and maybe some coconut milk ice cream.
