Chocolate for Breakfast!

Today I wanted to do something fun, new and exciting for breakfast. So I went searching. When I found a chocolate quinoa recipe, I knew it would be just what I was looking for. I also knew the kids would be super excoted to see chocolate in their bowl for breakfast. I found the recipe here. This was super easy to make and took no time at all. The kods of course devoured it and said it was their favorite breakfast. Who wouldn't love chocolate for breakfast? This was the perfect, once in a while breakfast treat! If you love chocolate you should give this a try.

RECIPE

INGREDIENTS

QUINOA BOWL:

• 1 cup uncooked white quinoa
• 2 cup unsweetened cashew milk, plus more for serving
• 2 Tbsp unsweetened cocoa powder
• 2-3 Tbsp maple syrup or coconut sugar
• 1/2 tsp vanilla

FOR SERVING

Mixed berries
Sliced banana
Coconut sugar
Hemp seeds or chia seeds
Coconut
Non dairy choc chips.

INSTRUCTIONS:

  1. Thoroughly rinse quinoa in a fine mesh strainer for 2 minutes, using your hands to sort through and pick out any discolored pieces or pebbles that may remain.

  2. Heat a small saucepan over medium heat.

  3. add rinsed, drained quinoa and toast for 3 minutes, stirring frequently, to dry up water and slightly toast.

  4. Add almond milk, and stir. Bring to a boil over high heat, then reduce heat to low and cook for 20-25 minutes, uncovered, stirring occasionally. If it stops simmering, increase heat to medium-low. You’re looking for a slight simmer throughout the cooking time.

  5. Once the liquid is absorbed and the quinoa is tender, remove from heat and add cocoa powder, maple syrup and vanilla (optional). Stir to combine.
    Taste and adjust flavor as needed.
