Easter was oficially our first holiday since switching to vegan. Due to the fact of being on a layoff, money was tight. I was worried that Easter was going to be an epic fail! However after some planning and some last minute decisions, we ended up making the best of it. Everyone ended up having a great day and that is what holidays are about, having fun with friends and family.
I had forgot to order their Easter chocolate from online in time so I had to come up with something. I bought easter bunny molds and melted non-dairy chocolate chips and mixed it with nuts and rice puffs. I then poured them into the molds and set in the freezer over night. I bought some easter treat boxes from our local bulk barn on sale for $0.89 per box. I ended up getting 16 pretty thick and big chocolate bunnies for $9 in total. Not too bad. I then filled some carrot shaped baggies with easter jelly beans and bunny shaped jube jubes. I filled the rest of their bakt with outside toys and art supplies mostly from the dollarstore. The kids loved it.
Due to the fact of forgetting to order chocolate, I had no eggs for a hunt. So this year we hid the easter jelly beans everywhere and let the kids wild! They had a blast. I also bought chalkboard eggs from the dollarstore. The kids were able to participate in egg decorating too without harming animals.
We of course wanted to play with the new toys they got. So everyone including the dog went to the park! The kids flew their new kites ad played with their new basket and soccer ball. Eventually they just played on the equipment. I am not sure how when the metal was still freezing.
The dog got to run like the wind. She sure does love being off leash and able to run free. I don't think she stopped running in circles for the first 10 minutes. It was very muddy and I think she hit every mud puddle. She is definately going to need a bath!
When we got home I started making dinner. We had a "roast" (more like "meat"loaf), veggies, garlic mashed potatoes and gravy. This was probably one of the best Easter dinners I have had in a very long time and all vegan. It was actually very easy too. Watch for this recipe tomorrow for #fruitsandveggiesmonday!
Now we are watching a movie together! What a wonderful day. Best Easter Yet!
