Today, I want to show you a delicious recipe that I and my friends like very much. πŸ‘Œ

It is an Indian dish and the name of it is derived from the Portuguese word "vinha d'alhos" which basically means marinade made out of wine and garlic. However, it usually contains many other seasonings, as you will see.

The Vindaloo I will be describing here is strictly plant-based. πŸ…πŸ₯’πŸ₯•πŸ₯”

As Vindaloos are often on of the spiciest dishes, I have opted for a milder version, leaving out the green chilies. If you, however, like spicy food, feel free to add them, but then, eat it at your own risk. 🌢🌢🌢

You will need the following kitchen equipment:

  • electric coffee grinder
  • electric herb chopper
  • oven
  • pan
  • a rolling pin
  • parchment paper for oven sheets
  • a big bowl
  • knife for cutting
  • two big cooking pots

So, let's get it on. 😁

Let's go through the list of ingredients. Let's first look at the Vindaloo paste, then at the rest of the Vindaloo and finally at the pink chapatis. πŸ‘

Ingredients for the Vindaloo paste

  • 1 tsp black peppercorns
  • 1 tsp cumin
  • 1 tsp fenugreek seed
  • 1 tsp hot chili powder
  • 1/2 tsp each of cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp turmeric
  • 2 tbsp of garlic and ginger paste
  • 2 tsp (black) mustard seeds
  • 2 tsp coriander powder
  • 2 tsp salt
  • 1 tsp seeds from green cardamoms
  • 4 bay leaves
  • 1 tsp of vinegar
  • optional: 4 chopped green chilies🌢 if you like it spicy (🀚stop, if you do not like spicy foods πŸ˜‰ )!

Ingredients for the rest of the Vindaloo πŸ…πŸ₯’πŸ₯•πŸ₯”πŸŒΆ

  • 2 chopped onions
  • 3 chopped tomatoesπŸ…
  • 3 potatoesπŸ₯”
  • 2 small sweet potatoes
  • celery
  • zucchini
  • fennel bulb
  • green bell pepper
  • some carrots
  • some mushrooms
  • 150 ml water πŸ’¦
  • 200g soya chunks (texturized vegetable protein)

Ingredients for pink flat breads (pink chapatis)

  • 500 g wheat flour
  • 1 tsp salt
  • 1 tbsp vegetable oilπŸ’¦
  • 150 ml water πŸ’¦
  • 250 ml tomato sauce πŸ…

Let's make the Vindaloo paste

  • Use an electric coffee grinder to grind all the seeds and leaves needed for the Vindaloo paste to a powder.
  • Then put the ground herbs and seeds into a stronger herb chopper, put all the remaining ingredients for the Vindaloo paste into the herb chopper, and whisk everything together.
  • Now put in some vinegar (1 tsp) into the herb chopper and whisk it again. Do this a few times until the paste becomes nice and creamy.

Let's finish the Vegetable VindalooπŸ’ͺ

  • Soak the soy chunks in water for about 15 minutes. After this, squeeze all the water from them. They are ready to be used now. Now pour some soy sauce over them, and let the chunks absorb the soy sauce.
  • Put 2 tsp of olive oil into a big cooking pot and heat it over medium heat.
  • Put in the onions and fry them until they get golden ( about 5 - 10 min).
  • Now add the vindaloo paste that we have prepared and stir everything around for about 2 minutes
  • When it starts to stick together, add in the chopped tomatoes and cook them on low heat for 10 minutes.
  • When the tomatoes have disintegrated, add in about 150 ml of water.
  • Now add all the other vegetables that you have chopped and the soy chunks, and mix them all well.
  • Cover the pot and let it cook on medium to low heat for about 15 minutes. To not let it scorch, stir from time to time.
  • While the vindaloo is cooking, take another cooking pot, and boil your potatoes until they are tender.
  • When the vegetables are cooked as you like it, turn of the heat and add in the potatoes.

Let's make the pink flat bread

  • Pour 500g of flour into a big bowl.
  • Add the salt and mix it all up using a whisk.
  • Add tbsp vegetable oil and the water and knead it well.
  • Add the tomato sauce - not all at once, but step by step, and knead it well and gently. If you are using a different kind of flour, it could be that you need a little more or less tomato sauce.
  • The dough should be soft and elastic. If it is too stiff, take a slightly wet cloth and cover the dough with it for about 5 minutes.
  • Knead the dough again, and form dough balls (with the size of golf balls) and roll them into circular flat breads with a rolling pin. Before doing this, sprinkle dry flour so that the flat breads do not stick to the bottom.
  • Now put a flat bread on a heated pan (low flame), and let it cook for about 40 seconds. You can move it with your fingers after it changes its consistency. Then flip it over and cook it again on the other side. Repeat this, until it is ready.

Now put some of the delicious Vindaloo on your plate and serve it with pink chapatis. πŸ‘Œ πŸ‘
