Vegan Wednesday Week #15 Vegan meals collection 2

Having healthy diet is very important to maintain our health. Therefore vegan meal choice is getting popular nowadays.

Today let me share with you all some Chinese meatless dishes, which’s easy to prepare at home and good for health. Hope you like it.

A. Tang Yuan sweet potatoes red bean soup

Ingredients: red beans, sweet potatoes, tang yuan, and red dates and crystal sugar.

Process:

  1. Soak red bean in water overnight.
  2. Boil red beans in a hot pot for 30mins.
  3. Put in sweet potatoes to continue boiling for 15mins.
  4. Add in Tang Yuan crystal sugar to boil for 5 mins.

B. Sesame mushroom tofu Mee pok soup

Ingredients: Enoki mushroom, mushroom, tofu, fried bean curbs, tomatoes, lettuce, chili, sesame oil, salt and soya sauce.

Process:

  1. Boil 500ml water in a hot pot
  2. After boiling, put in mushroom, fried bean curbs and continue boiling for 10mins
  3. Put in meepok, and continue boiling for 2mins
  4. Put in tofu, enoki mushroom, tomatoes and lettuce for 2mins and then add sesame oil, salt and soya sauce.

C. Natural Ginseng Herbal porridge

Ingredients: Essence of American Ginsengs and Cordyceps, Codonopsis root, wolfberry, red dates, carrots, scallion and rice

Process:

  1. Boiling rice and water in a hot pot for 10mins
  2. Put in Codonopsis root and continue boiling for 5mins
  3. Put in carrots and continue boiling for 10 mins
  4. Put in wolfberry, red dates and Essence of American Ginsengs and Cordyceps and continue boiling for 5mins
  5. Add scallion
