Wednesday is Vegan Day - Moroccan Khoubiza - Steamed and stewed green leaves with spices and preserved lemon!

Greetings my lovely Steemians!

It is time for another round of veganwednesday organized by the beautiful @heart-to-heart! This will be my sixth week participating in this contest and I just love being part of this amazing adventure each and every week!

For my entry this week, i will show you how to make another great Moroccan classic dish, called Khoubiza! Normally this dish is prepared with the leaves of Mallow which is very common in Morocco but you can also use Swiss chard, purslane, arugula, beet greens, spinach or watercress if you don't have the mallow leaves!

I actually used watercress and amaranth greens! And the dish was just super yummy! So let's check out below how to make this classic Moroccan dish!

*Moroccan Khoubiza

You will need the green leaves for this recipe!
I used watercress and amaranth greens!
Clean, wash and chop them very finely.

For the spices, you will need :

  • Olive oil
  • Salt
  • Paprika powder
  • Chili paste
  • Preserved lemon
  • Chopped garlic
  • Cumin powder
  • Chopped coriander

Place the finely cut green leaves in the steam and let it cook till soft for around 15 minutes.

This is how the green leaves will look after steaming!
Transfer it to your cooking pot!

Add all of the above listed spices and olive oil to the steamed greens and cook on medium fire for about 15 minutes more!

Keep stirring the greens while cooking until all the water has evaporated!
When you see the below texture, your Khoubiza is ready!

Transfer the Khoubiza in your serving plate and decorate with some slices of preserved lemon and green olives!

On top of being tasty this dish is super healthy! You can adjust the level of spicy-ness by adding less chili paste and if you don't like spicy food, just don't add chili at all.

This dish can be enjoyed with some nice Moroccan bread or some French baguette too!
