Ingredients:
whole wheat tortilla
1 sweet potato diced
1 medium onion diced
1 clove garlic chopped
1 can black beans
2 small tomatoes
1 avocado sliced
green onions
1/2 teaspoon basil
1/2 teaspoon parsley
1/2 teaspoon cumin
1/2 teaspoon oregano
salt and pepper to taste
olive oil
Step One
cook black beans with the oregano, salt pepper and cumin
Step Two
warm olive oil in a pan
add sweet potatoes, onions, salt, pepper, basil, parsley and saute until soft, then add garlic and cook for another minute.
Step Three
warm tortilla
place black beans on tortilla, top with sweet potatoes, onions, tomatoes, green onions and avocado slices.
