VEGETARIAN GASTRONOMY

It is one that uses ingredients that meet the vegetarian criteria, excluding meat and products derived from animal tissue. For ovolactovegetarianismo (the most common type of vegetarianism in the West) eggs and dairy products such as milk and cheese are allowed. The strictest forms of vegetarianism are veganism and frugivorism, which exclude all animal products, including dairy products and honey.

The traditional ones that have always been vegetarians: cereals, fruits, vegetables, nuts, et cetera;
Soy products, including tofu and tempeh, which are common sources of protein;
Textured vegetable protein, made from defatted vegetable flour, often included in chili recipe.
