A new ramen restaurant just opened near my office recently. I was aware of it before it started business because of its advertisement slogan "The World's First Michelin-starred Ramen", very attractive. That's why I decided to came here, Tsuta Japanese Soba Noddle, when my colleague preferred to have ramen for lunch yesterday.
There was facility for queue up setup outside, probably the restaurant expects long queues quite frequently. Luckily when we arrived, there were only a few people waiting. I took a few photos while waiting.
When we moved to beginning of the line, we were given the menu for us to choose our noodles. There are only 3 main varieties, Shoyu, Shio and Miso. each with different no. of pieces of BBQ pork, with and without eggs choices. There are also a few choices of rices and grilled meat as snacks.
Based on the way it operartes, I believe in Japan it should be like those traditional ramen restaurants, using a vending machine for customers to purchase tickets for their ramen and snacks. Then customers will enjoy the noodles in limited space, which could move the customers fast. When it moves to this premium shopping centre in Tsimshatsui, it has to adapt to the environment so vending machine cannot be used. Instead, customers pay at the counter and get their tickets. Waitress will collect the tickets when leading us to our seats, then pass them to kitchen.
Our seats were directly facing the Macro Polo Prince Hotel lobby. The is only one service plate on the table. On top of it are one pair of chopsticks, one spoon and one piece of napkin.
Ramen was served after a few minutes. Mine was Miso ramen with egg.
The taste was good. Ramen has a springy texture, the boiled egg was soft and tender. BBQ pork was not fatty. The Miso soup was tasty but not too thick, which won't make you felt thirsty after drinking it. This ramen deserves the Michelin One Star merit if its Japan local version is better than what we can have in Hong Kong. Only drawback was about the portion, it was too small when compare to ramen you can get in Japan at similar price. So this restaurant is definitely not for people looking at CPR. However, if you are looking for good ramen, this is a real good choice.
