Hi Steemians! Today I’m going to show you how to prepare a vegetable soup. My mother Mariska was born on 2 August, 1939 (you may also want to read a poem I wrote today in her honor). She taught me this recipe and now I will be sharing it with you.
It’s kind of cold this winter in Buenos Aires (if you live in the northern hemisphere you are enjoying summer right now), so I am preparing enough soup for a whole week.
You will need:
1 Celery | 1 Bouquet of Parsley |
---|---|
1 Big Onion | ½ Bell Pepper (green) |
2 Corn | 2 Carrots |
¼ Cabutia Pumpkin (Calabaza Cabutia) | 2 Vegetable Bouillon Cubes |
1 Teaspoon ground red pepper | 2 Garlic cloves |
Olive Oil | Boiled Water |
Elaboration
Cut all the vegetables in small cubes (Brunoise type cut). Put some olive oil in a large saucepan and sauté the onions first, the bell pepper, garlic, celery and parsley. Then add the carrots, cabutia pumpkin and corn. Parboil it for 5 minutes.
Can you hear Tina, my dog, burping while I'm preparing the soup? LOL
Add 2 bouillon cubes and start adding some boiled water, about 5 liters (approx. 1 ½ gallon). Then add the ground red pepper and leave it cooking for about 40 minutes. Serve with creamy cheese!
