Good morning steemit. How are you all today? I couldn't be better. Bussiness is going well and I found some blueberries. Even though they are frozen I enjoyed every bit of this yummy drink and planning to make some blueberry muffins on my free day. Two more days and its weekend.
We are gonna have some friends over and planning on treating them with some homemade vegan yummies. Was thinking of some tacos with pulled jackfruit and a yummy sweet treat but we'll see what comes out of it.
How are you guys enjoying the summer months? Or winter depending on where you live?
BLUEBERRY AND KALE MORNING BLISS 🌱🌞🌺
INGREDIENTS (SERVES 2)
2 cups fresh kale
1 to 2 cups unsweetened coconut water (or filtered water)
1 orange, peeled
1 cup pineapple
1 cup blueberries
1/2 avocado
1-2 tbsp coconut oil
FYI: I had a little pink dragon fruit left so added that too ;)
DIRECTIONS
- Blend kale and coconut water until smooth. Add remaining ingredients and blend again. If the smoothie is too thick, add more water and blend again until smooth. If you have a high-speed blender you can throw in everything at once.
- Optional: Top with hemp hearts or other superfoods/toppings you like.
