When life gives you coconuts, make a coconut morning drink. Ever since we moved to Cambodia I have been a green coconut water addict. I have at least one every day. Though we do not have enough coconut trees in our garden to provide me a fresh one every day, every little stall next to the road sells them fresh and cold for about $0.5 to $0.75.

And what's more, the little moringa seed we planted earlier this year has grown into a magnificent tree. I am so amazed at how fast they grow. And the best part, every part of the tree is edible and super nutritious. In Kenia moringa is fighting malnutrition. Next to housing all the essential vitamins and minerals our body needs on a daily basis it has a decent amount of protein too.
Impressive, right? If you live in a mild climate I would recommend ^lanting moringa in your garden. It grows super fast, is highly nutritious and super yum. It tastes like spinach but better.
And then there is the mighty soursop. I have talked about this tropical fruit many times before as it is my absolute favorite. Just as moringa, soursop is considered a superfood. But to be honest, in my world all fresh fruit and veggies are superfoods.
SMOOTHIE TIME!!!!!!
CARROT COCONUT MORINGA MORNING LOVE ღ ღ ღ
INGREDIENTS (SERVES 2)
- Water of one green coconut
- 1 big carrot
- 1 mango
- 1/2 soursop
- 1 banana
- 1 cup fresh moringa leaves
- 1 cup Chinese cabbage
- 2 tbsp extra virgin coconut oil
DIRECTIONS
- Blend Chinese cabbage, moringa and coconut water until smooth. Add the remaining ingredients and blend again. If the smoothie is too thick, add more liquid base. If you have a high-speed blender, throw everything in at once.
- Optional: top with toppings/superfoods of your choice. I used goji berries this time.
