GREEN SMOOTHIE OF THE DAY | FIGGY PUDDING GREEN SMOOTHIE 🌺🌱🌻

Good morning my lovely steemit friends. How are you all today? Already enjoying the summer sun? We sure are. Though it supposed to be rainy season here in Cambodia, it's tropically hot and we haven't seen a drop of rain for the past few days.

Already looking forward to going for a swim after we close our bakery. Nothing better than beach therapy to relax and unwind. Best after work activity.

But let's talk fig smoothie. Too bad figs are so hard to come by here as I just loved this smoothie. It tasted just like pudding but in a liquid format. So yum and super good for you.

Figs are a rich source of natural sugars (the good kind of sugar ;) ), minerals (including potassium, calcium, iron, and copper), and vitamins( A, E, and K). Furthermore, these yummy sweet treats of nature also contain a proteolytic enzyme that is considered to be a digestive aid.

FIGGY PUDDING GREEN SMOOTHIE 🌺🌱🌻

INGREDIENTS (SERVES 2 FOR BREAKFAST)


  • 2 cups fresh spinach
  • 2 cups unsweetened coconut milk
  • 2 cups figs
  • 1 banana
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • Optional toppings: goji berries and hemp hearts

DIRECTIONS


  1. Blend spinach and coconut milk until smooth. Add remaining ingredients and blend again. If the smoothie is too thick, add more coconut milk or water and blend again until smooth. If you have a high-speed blender you can throw in everything at once.
  2. Optional: Top with hemp hearts, goji berries or other superfoods/toppings you like.
